Slash & Dine: Bubba Ho-Tep: Taking Care of Business

Bruce Campbell as Elvis? Need we say more? I guess we should. It’s present day and the real Elvis is in a nursing home spending his time reminiscing on life as The King. You see, when Elvis reached the peak of his fame, he decided to lay low and get an impersonator to act as the real deal. The impersonator managed to fool everyone and eventually croaked on the toilet and well, you know that story. Also at the nursing home is John F. Kennedy, only now he’s a black man. JFK survived the attempted assassination, but in the process had to have his skin dyed black and was left to live out his days in the nursing home. Is this getting crazy enough for you yet? Elvis & JFK not only spend their days trying to prove their existence as true legends, but they’re also trying to fight off the ghost of a mummy, dubbed Bubba Ho-Tep, that appears as a cowboy (awesome!). This story is so original and so well played, especially by Mr. Campbell, that it’s truly a must see. It’s the perfect mix of black comedy & horror.
Now let’s take care of business…
Every Elvis fan knows that The King loved his signature sandwich:
The Elvis Delight

Ingredients:
1 small ripe banana
2 slices white bread
1/4 cup peanut butter
1 tbsp butter
Directions:
In a small bowl, mash the banana. Spread the peanut butter on one piece of toast and the mashed banana on the other.

Melt butter in frying pan. Fry the sandwich in melted butter until each side is golden brown. Serve hot.
Let’s wash all that peanut butter down with a drink.
JFK Shots

Ingredients:
1/3 oz. Tequila
1/3 oz. Everclear
1/3 oz. Grenadine
Directions:
Combine equal parts in drinking glass over ice.
This drink is guaranteed to take the top of your head off (Mom, if you’re ready this, I’m sorry for that last comment. I know how much you love JFK).
Elvis didn’t get fat by skipping dessert.
Bubba’s Ho-made Marshmallows

Ingredients:
3 envelopes of Knox gelatin
1/2 cup cold water
2 cups granulated sugar
1/2 cup confectioners sugar
2/3 cups corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract
Directions:
In electric mixer bowl, pour gelatin over 1/2 cup cold water. Soak for 10 minutes. Combine sugar, corn syrup and 1/4 cup water in a small saucepan. Bring to a boil. Pour boiling syrup into gelatin and mix at high speed. Add the salt & vanilla and beat on medium for 12 minutes.

Grease 9×13″ pan and lightly dust with confectioners sugar. Pour marshmallow mixture into pan and spread evenly.

Let mixture sit for a few hours. Remove from pan, cover the marshmallow slab with confectioners sugar and cut into pieces with scissors or a chef’s knife. Cover all sides of each marshmallow piece in confectioners’ sugar. Ready to serve.
